THE CHALLENGE

Temperate, often wet, and fortunately blessed with the odd bit of sunshine - the UK is a bountiful country who’s fields, hedgerows and forests are a natural larder. Few know this better than Rachel Lambert, cook and forager who’s won awards for her books about wild food. We joined Rachel on a days outing to pick Hawthorn berries, returning to her St Ives kitchen and capturing the process of transforming them from berries on a tree to a cheesecake on our plates. The goal was to inspire people everywhere to get out and interact with the environment around them - there’s ingredients almost everywhere you look, and whilst foraging may seem daunting to some Rachel always says “if you’ve picked a blackberry, you’re a forager already”
